Description:JOB SUMMARY:•Select, train, supervise, develop, discipline and counsel associates in the Kitchen.•Coordinate activities and direct training of Sous Chefs, Cooks and service personnel engaged in preparing, cooking, and serving foods to ensure efficient and profitable food service. •Direct and participate in planning menus and utilization of food surplus and leftovers. JOB RESPONSIBILITIES:•Schedule kitchen staff according to business levels•Direct and participate in the planning of menus and utilization of food surplus and leftovers.•Review menus; analyze recipes; determine food, labor and overhead costs to ensure economical and timely production.•Direct training of sous chefs, cooks and service personnel engaged in preparing, cooking, and serving foods.•Direct and correct the presentation and portioning of food according to standards.•Direct staff in sanitation and sanitary food handling.•Select, train, supervise, discipline and counsel associates in the Kitchen.•Oversee production of banquet food operations.•Maintain inventory; estimate food consumption and purchase ore requisition food and non-food items necessary for kitchen operation.•Confer with Food and Banquet Director and to coordinate policies and procedures between the kitchen and dining areas.Required Experience:KNOWLEDGE, SKILLS and ABILITIES:•Three (3) years direct experience; college degree preferred.•Thorough knowledge and/or experience in food preparation, presentation, purchasing, inventory control and kitchen policies and procedures.•Ability to plan, organize and direct activities of a group of employees.•Ability to work in a typical kitchen atmosphere requiring intensive standing and working in above normal temperatures.•Ability to read, write and communicate effectively with co-workers and patrons in an English speaking environment.•Ability to deal professionally, courteously and tactfully with the public and coworkers.•Ability to communicate and develop an effective working relationship with fellow associates, managers, outside representatives and agencies.•Formal Culinary Art Training.•Working knowledge of computer programs Word, Excel and ability to use Internet and electronic mailRequired Education:Health Card
